HIGH PROTEIN HEALTHY VEGAN LEMON CAKE ! 😍🍋 (oil free)

I don’t know if you are like me but I love lemon yogurt cake ! I usually eat for breakfast and deep them into my latte 🙈 I also usually put some nut butter on it first...
Soft & light, Lemon Lovers, you are going to want to save this recipe !
INGREDIENTS :
1 soy yogurt
1/2 cup lemon juice & zest one lemon
vanilla drop (optional)
1/2 cup chickpea flour (or coconut flour)
½ cup protein powder (any protein powder you like)
1/2 tsp baking soda
Sugar of choice (recommend coconut sugar for a low GI option)
INSTRUCTIONS :
In large bowl, whisk together flour, baking soda, sugar, and lemon zest.
Combine the soy yogurt and lemon juice
Fill the muffin tin or any pan you like
Bake for about 20min
Remove from oven and cool.
